Tacoma has an awesome Aquariam (better than Seattle's IMHO) at Point Defiance. It is on the way to Portland.

Portland: Multnomah Falls, a bit of a drive outside of Portland but well worth the trip! The drive up and down the gorge is beautiful!! Seaside is only an hour drive and a lot of activities there on the coast.

Lots of great suggestions from this poster! Columbia River Gorge is awesome. Do the whole drive and check out lots of the falls.
