A customer of mine did her Hunter's Star in batiks with lots of variety. We decided to make the quilting consistent, and use the smaller sections as frames around each block. Hope the picture comes through.....

This is one of my favorite quilt patterns, and yours is very nice. As for quilting, I had the same question when I recently finished a storm at sea. Hadn't even thought about how I would quilt it until reaching that point! What I ended up doing was a google search for images of that quilt, and it came up with a ton of peoples storm at seas. Not only was it fun looking at everyone elses color combinations, but I got some ideas of how to quilt my own!
I made a hunters star baby quilt about 7 years ago, and for the life of me I can't remember how I quilted it!!!
