Love your fabrics. And I think they would look great in the pattern Dunster posted. Can't wait to see pictures.

Would look awesome as a Bricks & Stepping Stones (http://www.quiltville.com) or, as someone else mentioned, a Warm Wishes. Those are some GORGEOUS fabrics!

I think this is looking GOOD!

In MHO I think that option 3 is great. If you feel you need a change maybe put a brown block in some of the paisley squares.

Ditto to all said! (I too, have the same fabrics and some others that coordinate. Haven't gotten to what I want to do with them so will live vicariously thru you. :-) )
