Beautiful colors, will be a fantastic quilt, but aren't limes green?

Yes, limes are green. There is no green in the quilt. Thus "Hold the Lime." Remember "hold the ketchup, hold the pickles, special orders don't upset us?" Hold means to not put it in something.
