Your blocks are beautiful! I’m looking forward to seeing your progress. Whether or not you put sashing is up to you and what you like. Unless civil war quilts were done a certain way? I think it would look pretty either way. If you put a sashing it will show off each individual block more. It will be beautiful no matter what.

Your blocks look great. I'm a fan of scrappy quilts, and I think sashing will really help each block stand out.

Great blocks. Did you see the quilt with the blocks set on point with solid (or solid-looking) squares in between. These would look nice in that setting.

I'd wait until I'm finished for the sashing. Then you can move your blocks if you want to. I think sashing would look good. They show 2 inches but I'd try 1 inch and 2 inches to see what you like best.
