Ok, I really like the star sashing because it looks good...
Here's an easy (easy) quilt with star sashing - you can also do the stars at the edges or wherever

This particular 'quilt' is just 8" squares using the "Get Squared" (strangely enough) 8.5" inch square  , and star sashing....

It should be apparent that your sashes are the same length as your block - if the block is 7.5" then the sash is 7.5", etc. The sashes can be any width - these are 4" (cut size), the small squares are half the width of a sash plus 1/4"... in this case 2"+1/4" for 2 1/4"

Thanks for sharing that, you make it look really easy. :D

I am a bit of a donut when it comes to things like that and I usually go for applique. Next week at our stitching group we are learning to foundation piece, so I might get their eventually.
