She does this just in case your center is a bit open, you won't see the batting.

I just made another one but this time with 8 inch squares, That is a lot better!!! Not sure why you put in the extra layer??? I did not have any heat resistant batting so I used two 8 inch warm and natural. I have not tried it on any hot dishes yet. But it looks great! I also did not pin the second one...sewed one inch from edge and then cut the extra off. Worked great!
