Taco Bean Soup Recipes
I'm looking for a really good Taco soup recipe with beans. I'm thinking of making this and taking it to my quilt guild meeting next month. One that is not too salty and light to medium spice (hotness). Anyone want to give their recipes? Thank-you in advance.

I have a recipe for Taco Soup that is good and super simple. Brown 1 lb of ground beef, drain. Add one can of kidney beans, one can of corn, one can of beef broth, one chopped onion, and one package of taco seasoning. Add water fill pot and cook for at least a half hour. Serve with tortilla chips. You could also add shredded cheese on top if desired.

Refried Bean Soup A family favorite and ready in just minutes! Low fat, vegetarian and high in fiber!
1 can refried beans chicken broth corn (frozen or canned) beans (drained and rinsed) I usually use 2 cans kidney and pinto diced tomatoes, rotel or salsa Heat refried beans in pan. Add some broth to thin it. Add corn, drained beans, tomatoes/salsa. Add more broth for good soup consistency. On the side I have grated cheese, crunched tortilla chips, onion, avocado, jalapeños, sour cream, etc. |
My family loves this one:

I use like quiltaddict, we have this at least once a month, SO I decided that I needed to keep the cost down (retired now). so I investigated Taco Seasoning.
1/4C. instant minced onion, 2 Tbsp chili powder, 2 tsp paprika, 2 tsp crushed dried red pepper flake, 1 1/2 tsp oregano, 1/2 tsp marjoram, 1 Tbsp salt, 1/4 tsp pepper, 2 Tbsp corn starch, 1 Tbsp dried garlic, 1 tsp cumin. 2 Tbsp = 1 package. |
1 can kidney beans, rinsed
1 can northern beans, rinsed 1 can whole corn, rinsed (sometime I leave this out) 2 cans diced tomatoes (can make one can Rotel for some spice), with juice 1 package taco seasoning mix (mild or hot and spicy, your choice) 1 package dry ranch mix (I have made it without this or only use 1/2 a package) 1 onion, cut up Water (I add a lot of water because I like more of a broth) I don't add any meat. Just sauté the onion a little with the taco seasoning. Add the rest of the ingredients. Bring to boil, turn down to a simmer for an hour or so. I love this soup and have sometimes made it using dry beans, have to cook a little longer but I love the taco taste. I think the calories aren't too bad either because I use a lot of water. Serita |
The taco seasoning that I buy is very inexpensive. I think under a dollar.

You can make your own dry ranch dressing mix too...
•1/3 cup, Powdered Milk •2 Tbsp, Dry Parsley •1½ tsp, Dried Dill •1 tsp, Dried Chives •2 tsp, Garlic Flakes •2 tsp, Onion Flakes •2 tsp, Onion Powder •1 tsp, Black Pepper |
Looking back at my recipe above I realized I forgot the can of diced tomatoes. That's what happens when you write it down from memory and your memory is getting very old. Sorry.
