I typed up a Pumpkin Muffin Recipe for everyone
 
I love, love, love muffins. This recipe is really easy and very tasty. I wanted to share it with everyone. I would provide you with a link but I think there is a virus attached to the page I found this on, so I typed it out for everyone.

Pumpkin Muffins
1 - Spice Cake Mix (regular cake mix size box, I think its 15 or 16 oz.)
1 - 15 oz. can of Pumpkin (I used a can of organic pumpkin from Trader Joe’s)
3 eggs
1/4 cup of water

(the original recipe didn’t have this but next time I make these I’m definitely going to add about 1 cup of chopped walnuts or pecans . I’ve also thought about adding orange zest, or switching out the water for orange juice or even adding dried cranberries.)

Streusel
1/2 cup all purpose flour
½ cup brown sugar
¼ cup softened butter

Mix the flour and the sugar together and cut in the butter. After you fill the muffin tins with the batter you add a couple of spoons of streusel on top before you put them in the oven to bake.

This batter makes 18 muffins full size muffins.

Preheat the oven to 350 degrees Fahrenheit.

Bake for 15 to 18 minutes or until a toothpick or cake tester inserted into the middle of a muffin comes out clean.

I will have try these for my next bake sale. The one using just the pumpkin & cake mix is also good. I think the strusel topping will have more eye appeal. Of course just about everyone likes nuts & raisins

I just realized that there was another Pumpkin Muffin (Pimkin Muffin recipe) recipe posted by another member earlier and I didn't mean to duplicate her recipe, but mine is a little different using spice cake mix (her recipe uses yellow cake) and my recipe adds the yummy streusel.

i agree with the thank you's. my dad's family were all army (except for my g'mother.) i appreciate all the time, effort and commitment.
i made the pimkin muffins, using the pumpkin and spice cake mix, no water or eggs. came out 12full size muffins. very yum and very moist. will try your recipe, too. thanks !
