"Sauerbraten" Breakfast
 

I was not really in the mood to make breakfast yesterday, so I just started throwing things together in the pan as I was cleaning out the fridge. I don't know what to call this, but it turned out delicious! I didn't measure anything, but here are the ingredients:

Beyond-Meat Brat, sliced and browned (could use regular brat sausage)
Extra-firm tofu, mushed (could use scrambled eggs instead)
onion, sliced thin
cabbage, sliced thin
apple, cut into chunks
apple cider vinegar to taste
salt
freshly ground pepper
sprinkling of pickling spices (watch out for the pepper corns and whole cloves)

My husband is like you. He can just throw anything together and make something marvelous. Not me but I sure love to eat :)
