Lovely Spring Asparagus Salad
 

I'm planning to make this today for a late lunch. It's so simple and elegant. It's a nice way to use asparagus. Personally, I don't like beets, so I'll substitute tomatoes or avocados.

It came out really well. My guys liked it. It was so nice to eat bright, fresh greens after months of cold weather and rain. I traded out the beets for avo and cherry tomatoes and I made a quick yogurt cheese to replace the expensive goat cheese. The dressing was simple and perfect. I'm putting this in my recipe notebook.

The dressing looks good. Love asparagus, but not arugula. Subbing baby spinach and following your lead with avocado and tomatoes just gave me an idea for our Easter salad!
