Baba Ganoush
 

This is an easy dip recipe and is good for anyone that tells you that they don't like eggplant. It may change their mind after trying it.

It's pretty much the same as Hummus, except it uses roasted eggplant in place of chickpeas. (There's lots of variations. I even saw one that used artichoke hearts.) I don't know anyone that doesn't like Baba Ganouch. It's creamy and garlicky and just delicious! Just don't tell them that there's eggplant in it. :)

My husband makes it and yes, it's soooo good! He makes hummus as well. Now I'm hungry again. :D
