Salmon Sandwich Salad
My son hates salmon, but the DH and I love it. I've been buying it anyway and trying to serve it for dinner, but the kid won't eat it. This morning I made up some salmon salad/sandwich spread for breakfast instead of dinner. The kid sleeps through breakfast, so all is good. I wanted to make the salad light and healthy. I don't have an official recipe, but here's what I did.
Baked 3, dinner-sized pieces of frozen salmon with just a little oil on the sheet pan, no salt. Let it cool. Added about 3 TBs. of plant-based mayonnaise and about 1/4 cup of plain, non-fat, Greek Yogurt (Fage) Chopped up a 1/2 of a red onion and added that Threw in a couple Tbs. of capers Added a dash of black pepper. I didn't need to add any salt. It tasted good without. Squeezed in a 1/3 lemon juice. We put it on toasted WW bread, added a 1/4 avo, a couple of Tbs. of LF Hummus and a pile of baby spinach. Delicious! I served it with a handful of fresh strawberries and coffee. Some relish and chopped parsley would have been nice in the spread, but I didn't think to add them. Now I have a way to eat our salmon without rocking the "dinner boat." :) |

I make different sandwich salads. I use similar ingredients, but I add sweet peppers, celery (for crunch) and hard boiled eggs. Homemade mayo, no yogurt plus salt and pepper, cumin and parsley. I love the turkey salad. Hmmmmm . . . maybe I need to cook a turkey breast today.
