Does anyone make salmon patties or burgers from salmon, or do you all just buy ready-made patties?

How would you do this? Would you run the raw meat through a food processor or meat grinder and then cook it, or the other way around? What kinds of seasonings or other ingredients do you add?

I don't like salmon much, but I'm thinking I might be able to manage a salmon burger.

Very fast and simple.....I make salmon patties often.....I just get a can of salmon, drain it, dump in a bowl with an egg, little cornmeal, little flour, chopped onion, salt, pepper and a big dash of dill. Squish it all together with my hands, form into patties and throw them into a skillet with a little hot oil, brown good on both sides and waalaa!!! Add some fresh purple hull peas, homegrown tomatoes, homemade buttermilk cornbread and everyone is fat and happy. Are they ready yet????? :D

I do about the same as Marsye except i use crushed saltine crackers and a tablespoon or so of flour. I pat the patties in cracker crumbs, the cook in oil, the outside is real crunchy.

Guess what I'm fixing for dinner tomorrow???

Um, I didn't even realize there was canned salmon. I may give it a try, but does anyone make patties from fresh/frozen salmon fillets?

Marsye, since it's you, I expect a picture. It does sound delicious (except for the peas, which I just don't like).

Ooh, Barb, you have me jumping! I just bought Saltines, so I will have to give that a try!

Lisanne, don't get discouraged when you open the can of salmon. It's not going to look like fresh salmon. First of all, I think you will want to drain of the juice...I usually save some of it in case I get too many crackers and flour in the mix and need more moisture. I always take off all the skin an pick out the bones. Probably a lot of nourishment in those, but the skin gives the salmon a stronger taste and I don't like to bite down on the bones even it they are softened by the canning and are safe to eat.
Try the patties with mashed potatoes and any vegetable you like. I use peas lots of the time.
I had a sister in law who was Catholic and she always fixed salmon croquettes with cream peas poured over them. check out http://www.google.com/search?q=salmo...=com.microsoft:en-us&ie=UTF-8&oe=UTF-8&startIndex=&startPage=1&rlz=1I7ADSA_en

There are bones in canned salmon? Maybe I won't try it after all. Thanks for the heads up, though.

No peas. No peas! I just hate peas.

The bones are no problem!!!! When you take your hand and squish all of the mixture together the bones just crumble up to nothing. You don't even know they are there. The bones are very soft and good for you.

Lisanne,
Don't worry about the bones - they are white, sofe, easy to see, easy to remove, but I like to eat 'em. They are good and have lots of calcium.
Use the same recipe and suggestions as Marseye and Barb - that's what I do (I use cracker or bread crumbs, no flour) and they're great. Team them with any starch and veggie you like, but I always pour creamed peas over them, too! (Sorry!)
I'll do some checking and see if I can find a recipe for you using fresh salmon to make the cakes.

I make mine with the canned salmon and also remove the skin and bones (not difficult, it all just picks apart), then I just add crushed saltines and an egg to hold it all together. Form a patty and fry like a burger, then I cover it with apple sauce. YUMMY!!! Now I'm gonna have to make these for dinner too.
