Chocolate Texas Sheet Cake
1 cup water 1 cup butter or margarine (or 1/2 cup butter and 1/2 cup oil) 1/3 cup cocoa 2 cups sugar 2 cups flour 1 teaspoon soda 1/4 teaspoon salt 2 eggs 1/2 cup buttermilk 1 1/2 teaspoons vanilla 1 teaspoon cinnamon, optional but very good 1. Mix together water, butter and cocoa, microwave 3 minutes. Set aside. 2. In mixing bowl add remaining dry ingredients 3. Stir hot chocolate mixture into dry ingredients 4. Add eggs, buttermilk and vanilla 5. Pour in 13 x 9 inch baking pan (that has been sprayed with Pam 6. Bake at 350 degrees for 30-40 minutes. Frost with Chocolate Texas Sheet Cake frosting: 1/4 cup butter or margarine 3 tablespoons cocoa 3 tablespoons buttermilk or milk 2 1/2 cups powdered sugar 1 teaspoon vanilla 3/4 cup pecans, chopped, opitional 1 cup coconut, optional 1. Combine butter, cocoa and buttermilk or milk, microwave for 2 minutes. 2. Add vanilla and powdered sugar. Beat until smooth. 3. Add pecans and coconut if desired. 4. Spread on cake while hot. This cake is even better the next day. |
