3 INGREDIENT POTATO SALAD

6 med. potatoes, cooked, peeled, cubed & salted
6 hard-boiled eggs, cubed & salted
4 tbsp. Miracle Whip

Combine the 3 ingredients. Cover and chill. Makes 6 lunch-sized servings or 12 side-dish servings.

That's easy enough...lol. I haven't made any potato salad for awhile....then I saw this post. I might have to get to that this weekend.

Add some chopped onion and a splash of yellow mustard and it's even better!

Oh, you guys have great tips! I added the onion flakes but forgot all about mustard and the tip of using canned potatoes makes it even simpler and quick! Made this recipe a few nights ago but reduced it to 4 potatoes and 4 hard boiled eggs and 6 TBSP. of salad dressing and added a dash of crushed red pepper flakes for a little bite to it. Stuck it in the freezer for a few min. to get it cold just in time for dinner. A real hit! Thank you! :-D :-D ;)

That's the basis of my mom's recipe. But she'd also add some chopped celery and onion (she always cooked with white onion). Don't forget the S&P too!
