I am going low-fat vegan for 7 months for health reasons. Well, only 90% vegan while I use up the remaining non-vegan food I have. After 7 months, I'll re-evaluate.

I was vegetarian for a few years in college, but ate a ton of dairy then, so this will be more of an adjustment.

Anyway, I'm wondering if there are any others of you on this board, or if anyone has low-fat vegan recipes they'd like to share? Understand, I have several cookbooks, so I'm not desperate for recipes. Just wondering what my fellow quilters' favorites are.

Btw, I won't eat mushrooms in anything, and I can't handle hot spices. Any non-mushroom burger patty recipes would be hugely appreciated, as burgers are my favorite food.
