Default Beans For Breakfast

We have chickens, plus more chicks hatching, so we always have eggs. I love eggs, but I do get tired of them and they are high in cholesterol, so I'd like to find some other breakfast ideas that are made with beans. I've found this site:https://www.theleangreenbean.com/10-...for-breakfast/ , the recipes look good, but are the same, old, trendy ones that are everywhere these days. (I'm so tired of hearing about avocado toast and all the ways that you can build a taco.) Does anyone have some new ideas?

Full British Breakfast includes pretty basic baked beans and grilled tomatoes along with sausages and eggs and some sort of toast.

I like to get out my waffle maker and do a huge batch of waffles. I put wax paper between the waffles and stick them in a freezer container in the freezer. It is simple to take them out and pop them in the toaster to thaw and heat and top with maple syrup, fresh fruit/yougurt or fruit jam.

My best friend in school mother was British. What we called Pork and Beans she called baked beans They were the beans at most British meals. My friend said when they visited the grandparents in London canned baked beans (pork and beans) were served almost every meal. They called dinner time tea and beans on toast was an acceptable tea meal on any week day.

I mash pinto beans and make a cheese and bean burrito with the seasonings I like.

Bean and Bacon Sandwich
Slice of Bread, place about 1/2 cup Pork and Beans on the bread, place 1 slice cheese on beans Place 3 half slices of bacon on cheese. Broil for approx. 5 min. in preheated oven, Watch closely.
30 yrs ago I worked at a Public and local stable that offered trail rides on Horse back. We would have these for lunch, it was a favorite among us trail guides.

When we were in Egypt the hotel breakfast rooms always had a section for serving local breakfast foods and one for Western. I wanted to eat what the locals eat so enjoyed the uncrowded buffet while my fellow travellers ate what they could eat at home. This dish became one of my favourites.

I use my panini press to make bean and egg quesadillas, I throw in any left over veggies I have. I use one whole egg the rest is just egg whites. The cholesterol is in the yokes so I don't feel guilty eating so many eggs. I wrap them individually and pop them in the freezer.

Eggs may be high in cholesterol, but what causes high cholesterol in people is not cholesterol in foods, but saturated fats in foods. Eat the egg, skip the bacon/sausage. BTW beans for breakfast sounds great!!

When I cook a pot of pinto beans, I drain the liquid off of some and place them in blender to create refried beans!
  • Toast with bean, cheese, avocado
  • quesadilla
  • serve with eggs
  • my favorite taco: egg, bean, cheese in flour tortilla

We have chickens, free-range--they come for bread scraps when you call!
I also enjoy beating 1-2 eggs and pouring a thin layer in a not-hot, but slightly warm 10 inch non-stick frying pan. A lid helps steam cook the eggs. fill with omelette-type fillers and roll up, like a tortilla!

My mom would make buttered toast with tomato slices.....simple and yummy.
