it's a variation of beans and rice.
So you can get your omega-3 too.

1 cup rice
1 can black beans
1 cup frozen corn or canned corn drained
4 or 5 green onions cut on an angle 1/2 " or so pieces
1 can of pink salmon
just a touch of cayenne pepper
Mrs. Dash seasoning to taste
I added a bit of broth to make it more moist.

Saute the onion in a pan with some cooking spray, add the corn, beans and salmon cook till heated through. Add to rice and mix up.

I put some soy sauce on mine. Next time I make this I am going to cook a couple of salmon fillets instead of using the canned version. It's quite filling and low fat. It's a nice meal for lunch or a quick easy meal.

I used an actual salmon fillet and it tasted better. I even experimented adding a Tilapia fillet to it also. The results were very good. So my last batch of this dish I used a bag of frozen Santa Fe style veggies.

I forgot to add this.....

Cook the fish before adding it to the rice mixture. I usually put mine under the broiler for about 6 minutes on each side. Remember to use some cooking spray on the broiler pan to prevent it from sticking.
I suppose you cook cook the fish in a skillet too. Just keep the oil to a minimum or use a cooking spray.
