Default Summer Carrot Slaw

Bought this at a deli, liked it so I played with it on my own so this is more of a “method” than a recipe.

whisk 4 ingredients for dressing together:
About 2 Tblsp of each:
Dijon mustard, olive oil, honey and red wine vinegar.

Pour dressing over about 1# coarse shredded carrots & 1/2 cup raisins. Let marinate several hours.

Before serving add slivered almonds. Keeps good.

Delicious! I made it yesterday. Thanks Tranum. I still love the old fashioned Carrot, raisin, grated apple and mayo salad too.

This reminds me of my childhood along time ago! My brother and I used to eat sandwiches made of shredded carrots and mayo.also canned tomatoes on bread.It wasn't that we didn't have better things to eat it was what we liked

I made a carrot and raisin salad a few times using Ranch dressing. It was good.

Nice! I'm always trying to find more ways to eat carrots. I don't like them cooked, but love them raw. Thanks!
