Here are the recipes I have used for years and they have never had any complaints, LOL. You can leave the blueberries out of the recipe below and it is still just as good. Good luck & ENJOY!!!

    Recipes:
    Zucchini Blueberry Bread
    1 1/2 cups flour
    1 teaspoon ground cinnamon
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon baking powder
    1/4 teaspoon ground nutmeg
    1 cup sugar
    1 cup finely shredded zucchini
    1/4 cup cooking oil
    1 egg
1/4 teaspoon finely shredded lemon peel
1 1/2 cups blueberries (can substitute pineapple or other berries)
Bake at 350 till toothpick comes out clean. Makes 1 full size loaf or 3 mini-loaves.

    Banana Bread
    3 bananas mashed
    1 egg
    3/4 cup sugar
    2 tablespoons melted butter
    2 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 cup chopped nuts
    Bake at 350 till done.

This is the only zucchini bread recipe I use now. It's SO good! I use regular chocolate chips instead of mini's. Enjoy!

    BANANA BREAD
    1 cup sugar
    1/2 cup oil
    3 tbsp. milk
    2 eggs
    1 cup mashed banana
    1 1/2 cups flour
    1/2 cups quick cook oats
    1/2 tsp. cinnamon
    dash of nutmeg
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. vanilla
    1 cup chopped nuts
    OR
1/2 cup chopped nuts and 1/2 cup craisins or raisins
    Stir dry ingredients together.
In separate large bowl mix sugar and oil. Add beaten eggs, banana and milk. Add flour mixture. Stir until well blended. Add vanilla, nuts and raisins. Bake in well greased loaf pan for 1 hour at 350*.
Or makes about 18 muffins - bake 20 minutes.

I fiddled with a recipe my MIL gave me and this is what I use now.

For me walnuts are the best for flavor in quick breads.

Don't forget the bread freezes well.

    Have fun camping.
