Default chewy pumpkin cookie recipe

does anyone have one? don;t want a cake like recipe.

Her is the only recipe I could find maybe you could leave out the dates.
DATE PUMPKIN COOKIES
1/2 c. butter or margarine 1 c. flour
1 c. brown sugar 1 tsp. baking powder
1 egg 1 tsp. soda
1/2 c. pumpkin 1/2 tsp. salt
1/2 c. nuts 1 1/2 tsp. cinnamon
1 c. diced dates 1/2 tsp. cloves
1 tsp. almond flavoring 1 c. quick oatmeal
Combine butter, sugar, egg and beat well,. Add oatmeal and all dry ingredients and add to the pumpkin
mix. Mix well! Drop by teaspoonfuls onto a greased cookie sheet and bake 10 to 12 minutes at 350 degrees
or till the look done. Might be 15 minutes in some ovens.
yield: 3 1/2 to 4 dozen cookies. laceybarjack

Also, here is Pumpkin Bar Recipe:
4 eggs 2 c. flour
1 c. oil 1 tsp. baking soda
2 c. sugar 1 tsp. salt
1 tsp. vanilla 2 tsp. cinnamon
2 c. pumpkin 2 tsp. baking powder
Mix all ingredients together. Place in 11 X 17 jelly roll pan or two 9 X 13 pans. Bake at 350 degrees for 20
minutes. Cool and frost with the folllowing frosting. Freezes well.
PUMPKIN BARS FROSTING:
1 (3oz.) pkg. cream cheese, softened
1 stick butter, melted
1 tsp. vanilla
1 lb. powdered sugar
Mix together and spread on bars.
This is my friend Deb's recipe.

thanks lacybarjack. My research has shown that the moisture in the pumpkin is what makes it cakey. oatmeal soaks up some of that so i will try your recipe. Also cooking the pumpkin until it dries out is supposed to help. I will try both.
