Default Cheddar ranch chicken

I made this fabulous dish the other day and have to share it. It can be served over potatoes, rice, pasta or even with fresh baked bread as a thick soup, or wrap in tortillas lay in a casserole dish with extra sauce on top and bake. oh, you could dice it smaller and serve as a dip, or put on bread rounds and toast it as an appetizer. So many ideas... I need to make some more. Yum!

Quantities can be adjusted to your liking.

Here it is ...cheddar ranch chicken
cooked Chicken, diced (3 breasts)
red Sweet peppers, sliced (1 pepper)
Onions, diced (half onion)
fresh Mushrooms, sliced (1 sm pkg)
Peas, canned or frozen (1 cup or half a can)
Velveeta, cubed (1/4 of the large block)
Butter (1/2 stick)
Greek yogurt (2 heaping spoonfuls)
Ranch dressing mix (1/2 pkg)

saute pepper, onion and mushroon in olive oil under tender with some browning. Add chicken. Add butter and cheese. When melted add ranch dressing and yogurt. Finally add the peas.

Serve as desired using ideas above.

My finiky 3 yr old grandson loves this, he asked for it 3 nights in a row.

This is so good! I used sour cream in place of the yogurt only because I had it on hand. I also put the chicken breasts on the bottom and the rest on the top. When serving I put over whole grain noodles. Thanks for this!

Sounds great, anything with chicken, mushrooms and velveeta has to be good.

Sounds yummy. Velveeta, butter, mushrooms and ranch how could it not be yummy.
