QuiltE that Rice Salad sounded so good, I included the ingredients on my shopping list this morning and have the rice cooking now. So far we are having a comfortable temperature this morning but will still enjoy a cold salad later with our salmon and mushrooms with boursin herb and garlic cheese.

Yes, goes great with salmon!!! In fact, salmon's on my menu this evening, too. More comfortable here today too. While it's been HHH here, it has been no where near as wicked as what you in the west have had.

I usually do not "cool" the rice fully. Just while getting the other ingredients ready for the add-ins. The warmth of the rice helps to absorb the dressing/flavours into the rice. I'm sure yours will be fine chilled. Or you could warm in the microwave a bit?

Play with the ingredients/quantities. I am far from the precise measurement person. Sometimes a bit more soya sauce gets in the mix. Often leave the canned mushrooms out, as I am not really fond of their "rubbery" effect. Have never tried it with fresh mushrooms, but I think that would be a perfect fit. Chopped green onions would be a great add-in too, but again, I don't usually plan ahead enough to have them in stock!

QuiltE, just finishing off the salad for my lunch...I went with 1/4 cup of the cider vinegar and 1/3 cup olive oil and very happy with the taste.

Would be a good candidate for you as you folks travel the trails!

*giggles* ... Potato salad is another no go for me! Remember I said anything-cold-eggs were a no, too? I think it is my aversion to mayo with both. Now here's the big flip on that .... love mayo with tomatoes on a burger or BLT! Makes no sense at all!!!!

Hope you will give that rice salad a try, and that you like it.

I think tonight will be a normally not supper one ..... Back Bacon, Lettuce and Tomato sandwich .... yes with my love/hate mayo!
