I made these for supper tonight along with pork steak and peas. We had leftover mashed potatoes from last night meal.

I am working on a Quilters cookbook blog and will add this to that blog, if you like to see it you can visit that blog

I am collecting recipes from Quilters around the world to add to this blog, so if you have any that you make for your family, friends, etc. please post your recipe on my pda

so I can add them to my blog Thank you!

Crispy Potato Patties Recipe

Prep Time: 15 minutes
Cook Time: 8 minutes
Total Time: 23 minutes
Ingredients:
2 cups mashed potatoes
1 egg, beaten
1 onion, minced (optional) I didn't use the onion
1/4 tsp. salt
1/8 tsp. white pepper
2-3 Tbsp. olive oil
1/2 cup flour
Preparation:
Mix together (I used a spatula and was easy to mix) mashed potatoes, beaten egg and onion in a medium bowl. Add salt and pepper and stir. Over medium heat, heat olive oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick. Cook until bottom is browned and crisp, about 3-4 minutes. Using a spatula (I sprayed the spatula with Pam Olive Oil) Carefully turn the patty over and cook the second side until brown and crisp, 3-4 minutes. Serve with ketchup or salsa

Makes: * 8 Crispy Potato Patties

My mom used to make those when we were growing up. Had forgotten about them. We called them potato cakes. Thanks.
