Hummingbird Cake - Revised Recipe

Hummingbird Cake - Revised Recipe

Here's the entire recipe - I forgot to include the icing recipe! So sorry!

Hummingbird Cake

3 c. flour
1-1/2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon

3 eggs - beaten
1-1/2 c. salad oil
1-1/2 tsp. vanilla
1 8 oz. can crushed pineapple with juice
1 c. chopped pecans (I used walnuts)
2 c. chopped bananas

Combine dry ingredients. Add eggs and oil and stir until dry ingredients are moist. Do not beat or cake will be tough. Stir in vanilla, pineapple, nuts and bananas. Put in well greased 9" x 13" pan. Bake at 350 deg. for 55 min. Cool at least 15 minutes.

Icing

1 pkg 8 oz. cream cheese - softened
1/2 c. butter
1 lb. powdered sugar
1 tsp. vanilla

Beat ingredients with a mixer and ice cake. Sprinkle more nuts on top.

If you are using two 9" round pans, bake 30-35 minutes and double the icing recipe.

Sounds delicious but was wondering why it's called "Hummingbird" Cake.

Just heard of it and it sounded so interesting that I made it and it is awesome.........also I think that it is called a hummingbird cake because of its sweetness. I feed hummingbirds and it is sugar sweetend water......Just my guess
