Question Need recipe for Pancit

This Filipino dish is delicious. I have lost my recipe and it has been such a long, long time I need a refresher.
I used a recipe from all recipes but I'm disappointed. . . So I'm searching other places and hope someone on here has a tried and true one they will share.

This is how I learned to do itl Once you made it it will come back; cook garlic, onion a little thyme and tarragon in the wok, add snap peas, carrots, chicken (or shrimp) that has been marinated with soy,, add chopped cabbage and cook a little before adding cooked noodles. Happy eating.

I have not tried this recipe but will be soon. It is as I remember it at parties in California. I know you could substitute beef, chicken or shrimp (or a combo).

This stir-fry version is more what I had in mind and serves only 4 instead of 12-16 (party size) in the recipe above. I was unable to delete my first post. Rice noodles are very expensive where I live so I will use cooked thin spaghetti. I never use MSG as I am allergic.

I learned to make it from my Filipina sister-in-law. Not really a recipe but a method.
Soak the rice noodles and then cut into smaller pieces.
Then you can use whatever meat or seafood you desire. Chicken, pork, shrimp or a combination of any of these. Just saute it.
Same with veggies. Carrots, peapods, whatever and of course cabbage. Saute these.
Put it all together with noodles and season with soy sauce.

Don't forget this one;

CHICKEN KELAGUEN

INGREDIENTS:

5lbs chicken, BBQed and chopped
1 onion, chopped
4 green onions, chopped
hot pepper, to taste
6 lemons or 1/2 bag lemon powder
salt, to taste
crushed pepper, to taste
freshly grated coconut

DIRECTIONS:

In a large bowl add your chicken, squeeze your lemons (or lemon powder) and salt. Mix thoroughly and when satisfied with flavor add in rest of ingredients; mix well. Then enjoy with rice or titiyas. I could eat this all day.

Rice noodles Bihon. They are very thin threads.

I saw this recipe late last night. Thanks for sharing!!!!

No Bihon noodles where I live so I will look on Amazon or look for them next trip to Phoenix.
