Default Fresh Apple Cake

I got this recipe from a friend and used less oil and the next time I make I would use less sugar. But it's yummy, especially warm out of the oven with vanilla ice cream.


FRESH APPLE CAKE


Preheat oven to 325


4 cups diced, peeled applies
2 cups sugar
1 cup vegetable or other cooking oil
2 eggs, well beaten
1 tsp vanilla


2 cups flour
1 tsp soda
2 tsp cinnamon
1 tsp salt
1 cup chopped nuts (optional)


Combine sugar, oil, eggs and vanilla; add diced apples. Sift together flour, soda, cinnamon and salt; add to apple mixture and mix thoroughly. This will be a thick batter. Add nuts, mix again. Pour into greased and floured 9 x 9 inch square pan or a loaf pan. Bake at 325 for 90 minutes. Test cake with toothpick. Run knife around edge to loosen; remove from pan to cool.
Serves 8 - 10

Thanks for the recipe--sounds good. How much sugar would you use next time?

Whoa!! I don't think this recipe is for a single loaf. Could you please check it again and post if it is for one or two loaf pans.
