Default Tortellini Soup

I just had this and it is SO good - great for a cold winter day if you are having one of those.

1 T. olive oil

1 vadalia onion-chopped

4 garlic cloves-chopped

1 large can chicken broth (stock)

1 small can chicken broth (stock)

1 can stewed tomatoes-I use more and combine stewed with diced

More broth or stock as needed


Italian meatballs

1 19 oz. frozen cheese tortellini

1 package spinach-thawed and drained

1/2 c. Parmesan cheese

Salt, pepper to taste


In olive oil saute onion and garlic

Add chicken broth and tomatoes

Bring to boil

Add meatballs, cook for 10 minutes

Add tortellini, spinach, and cheese

Cook 10 minutes or until tortellini is tender

Season with salt and pepper


As tortellini soaks up the broth you might need to add more broth (stock) or water.

you can also use Italian sausage instead of meatballs.
