Cannellini Beans & Tomato Salad 4 cups cannellini beans (2 16 oz cans, drained and rinsed)

2 cloves garlic, minced

1/2 large onion, minced

6 stalks of celery,thinly sliced ( preferable the pale center stalks with leaves)

4 - 5 tomatoes, cubed

Dressing
2 tablespoons lemon juice

2 tablespoons olive oil

1 teaspoon basil or 1 tablespoon fresh basil, chiffonade

Saute onions until translucent then add garlic, saute 2 more minutes. Combine the vegetables in a bowl and mix. Add beans and stir carefully. Combine dressing ingredients and drizzle over salad and mix to coat the vegetables and beans. Or you can cheat like I did and use your favorite vinegrette type dressing.

Serves 4 as a main course.

Maybe use your crockpot or pressure cooker to avoid using oven. Also, different salads are great. I like salads all year long but summer is the best.

gallons and gallons of iced tea! anything cold and fresh. God bless us all. Who can deny global warming?

Make rice or baked potatoes in the crockpot. Home made soups that you can make in a hurry are good too. Make ham salad and egg salad for sandwiches. Recently made a chicken lunchmeat loaf with cooked chicken, seasoned broth, and gelatin that was wonderful. Made a loaf pan full and gave part of it to our daughter. Meatball stew in the pressure cooker. corn on the cob in the crockpot, Lots of ways to do good nourishing meals without lots of work.

I'm bringing dinner over to my inlaw's tonight. It's supposed to be 90 & high humidity & they don't like to turn on their AC. I'm making a crockpot meal- sausage sandwiches- & a big salad. That way I won't have to heat up their house by turning on the oven & they can have a warm meal.

I make pasta in the microwave so it doesn't heat up the kitchen. I use my crock pot a good bit too. Desserts are good in the crock pot. Baked apples & lava cake come to mind.

We love a fresh greens salad with strawberies and chicken strips (sauteed). Then use a Strawberry vinagerette

Cucumbers and onions in vinegar and oil.
Wilted lettuce salad with onion & bacon, and bacon drippings in the dressing.
Sit out on the back porch after dinner with watermelon, rinse the porch off with a hose after.
Yum!
