Bacon Wrapped Little Loaves

1 1/2 lb. hamb
1 egg
1/4 c. chopped green pepper
1 t. salt
1/2 t. instant beef bouillon
1 c. shredded cheddar cheese
1/4 c. panko bread crumbs
1 small onion chopped
1/4 c. lemon juice
6 slices bacon, cut in halves

Combine all but bacon. Shape in 6 loaves. Crisscross 2 half slices bacon on loaves. Bake 50 min. at 350. I got this from a Betty Crocker Hamb. cookbook and have been making it since 1975

I agree with this one! Since I tried it, it's the only one I make...I use oatmeal in place of bread crumbs...just the best!

Old Classic Recipe--Meat Loaf
My DH loves meat loaf, and meat loaf sandwiches. I found this recipe in an cookbook by Better Homes and Gardens.
It is the best we have ever eaten.
1# meat loaf--gr. church
1/2# sausage
2 eggs
1 c. milk
salt and pepper,
sprinkle of garlic powder and onion powder.
bread crumbs of 2 slices of bread--toasted.
Combine the meats and using a spoon or your hands, (clean of course), so that they are well mixed. Add seasonings, add eggs, beaten and milk.
Combine all and stir until well mixed.
Place in a loaf or square pan and smooth down well.
Place a sauce of Ketchup and Brown Sugar over the top.
Bake 375 oven about 40 minutes.
Let cool about 15 min. before cutting.

Watson's Meatloaf

2 lbs lean ground beef
3 tbsp minced, dehydrated onion ( or mince a small onion and saute)
1 tbsp minced garlic
1 tsp pepper
1 1/2 tsp seasoned salt
1 cup Italian seasoned bread crumbs
2 lg eggs
3 1/2 tbsp sour cream
1 1/2 tbsp worcestershire sauce
1 cup salsa

1/2 cup ketchup
3 tbsp brown sugar

Mix all of the first set of ingredients with a spoon and then with your hands to combine.
Pack into a large, greased loaf pan and bake uncovered 40 minutes at 375.
Increase heat to 400, bake 15 minutes or until it comes to 160 degrees.
Slather on sauce and return to oven for 10 minutes.
Let loaf rest 15 minutes before slicing.

* You can also put pieces of bread on the bottom of the loaf pan to suck up the grease, but with lean ground beef it shouldn't be too bad.

Watson, what a great idea about putting bread in the bottom of the pan to soak up the grease. Ingenious!

Try adding some sage and thyme or some Worcestershire sauce for a more flavorful dish. Finally, don’t forget to season with fresh cracked pepper and Worcestershire sauce.
