I made this last night, so easy and yummy and perfect for winter.

Bean Soup. Serves 4.

Ingredients
1 onion, finely chopped
1 red pepper, finely chopped
4oz red lentils
1 400g tin chopped tomatoes
1 400g tin kidney beans, rinsed and drained
1.5 pints chicken stock
2 tsp paprika
1/2 tsp tabasco sauce
salt and pepper

Method
1. Fry onion and pepper in a little butter or olive oil.

2. Add all other ingredients, stir well, bring up to the boil and then simmer for approx 20 mins.

3. Blend until smooth. If it seems too thick you can add some more chicken stock.

4. Return to the pot to heat through and serve

Now that the weather here has finally become more like fall, this soup sounds like a good hot lunch after working outside. Next to baking bread, I really like to make soup. Thanks.
