I was aksed to give the recipe for this soup I mentioned on another topic.
Used to eat frequently at this restaurant in Austin and asked for their soup recipe just before I moved back to VA 4 years ago. Of course, it was written in amounts for about a hundred people, so I adjusted it for my own use! And in the way of soup, I add or detract things from it as the whim or 'on-hand' suits me. Measurements aren't given but that's an easy personal fix for anyone who cooks alot.

This is very brothy until the tortillas and cheese are added, which is why I like it.

1-2 cans Swanson chicken broth
couple poached chicken breasts, chopped
some chopped onion
couple cans Rotel Tomatoes Lime and Cilantro or one of Rotel Original (hotter) and one of lime/cilantro
can diced tomatoes
canned or frozen white corn kernels
some minced carrots
a bit of minced garlic
salt and lots of freshly ground pepper
cilantro
cumin
Sometimes I add leftover black beans or left over rice.

Simmer as long as you wish, it just gets better. Freezes great, too!

Top with sliced avocado, tortilla strips, jack cheese, and a healthy squeeze of lime (or lemon in a pinch)

Today for lunch, three days after I made the soup originally, I hade a bowlful with some leftover canned green beans added and, of course, some Tostitos corn tortilla strips and a handful of jack cheese......yummy, yummy, yummy on this chillier but sunny day! :-D

Thanks again, Jan. I finally got a chance to make your tortilla soup and it was DELICIOUS.
