Default Lemon Chickpea Orzo Soup

I love the Greek Avgolemono soup, but OMG, it has a gazillion calories in it and is high in saturated fat. One of my favorite vegan blogs is The Simple Veganista. She has a recipe for a vegan version of this soup that sound delicious. I'm going to try it tonight.

Omg, this looks wonderful! I can’t wait to try it!! My dil dropped off a dish tonight that is orzo, tomatoes, basil, chili peppers, and I don’t know what else, but I ate the whole thing, which I’m sure was 2 servings! It was great! I will get the recipe and put it here!

Sounds good, Tropit- let us know how it turned out.
Since Paul's been better he's cooking up a storm! He hasn't been working so he's always in the kitchen and he
loves new recipes.

I haven't tried it yet, but it is on this week's menu. I'll let you know how it turns out. Your DIL's dish sounds wonderful too!

I made this the other day....really, really good! So simple, but delicious! I did make one substitution. I could not find orzo in our store...shelf empty, so I used brown rice. It still came out excellent. I highly recommend this recipe.
