So, my tomatoes are finally coming in in abundance. I have made Salsa and Bruchetta but DH would like me to try to make some Marinara Sauce. I don't really want to have to can it but do have a huge freezer and can freeze some. Anyone have some great recipes for using up my homegrown tomatoes!!! I also have basil growing.

Gayle, this is so simple and so delicious!
Saute garlic in good olive oil just until yellow, don't let it burn, add tomatoes, basil, and simmer. If the tomatoes are acidic add a bit of sugar.
I don't can or freeze it but I probably should. There is NOTHING like fresh tomatoes for sauce!! :)
I'm on pasta overload at this time of year haha

I always have so much that I peel the tomatoes and then get out as much of the seeds out that I can...
Then put in freezer bags.... Ready to use Like Susie said, garlic, Olive Oil and seasonings.... Then tomatoes, some 1-2 tsp of sugar and one can of tomato sauce......then I add my basil @ the end...when ready to serve.....or freeze
Don't forget to freeze the basil too.......or make pesto....yum!!

Do you just freeze the tomatoes? before adding the garlic olive oil and seasonings??

Yes, If I don't have time to make the sauce I do.....Then when they are in the pot and thawing,,,,,I pour all the clear liquid off of them[keeping it just in case I need it]......in case they get too thick.....

I agree with Sueisallaboutquilts. Keep it simple. I call sauce from your garden "Summer in a Jar"

GARLIC - Good olive oil, some fresh basil and that is it. If you want to skip the sugar, add a grated carrot. Does the same thing.

After I simmer my sauce, I put it through a food mill to take out the seeds and skin, but if you like it chucky you can skip that step.
