Macaroni Salad you can put just anything, or whatever you're in mood that day!

Our kids all like Macaroni Salad.
Here is my version of it.
Boil Macroni until well done. Don't know how much I use--it doubles you know. Drain well.
Add whatever veggies, Olives, Black and Green, whatever you think sounds good. We like Olives, Carrots, Celery.
Mix well after rinsing the Macroni in cold water.
Add salt and pepper, and your choice of veggies, ect.
Dressing: Mayonnaise
Sour Cream,salt and Pepper. Stir well, add to the macaroni mixture and stir well. Chill a couple of hours before serving.
Some people add Chunk Cheese-small bites, and an Oil-Vinegar Dressing. We like the Cream Dressing better.
Good Luck!! How many it will serve depends on how much macaroni you use. It keeps well in refrig.

Used Hellman's forever but the last few years use Veganaise- it tastes really good.

I do that too! It gives it just a little twang that I love. I also prefer Veganaise. It's tasty, but not so heavy as regular mayo.

Veganaise is so good! Way healthier, but more expensive. Worth it to me. Not easy to find. We get it at Whole Foods.

I love macaroni salad but I am the only one in my family. I used to make it from scratch but have adapted it to store bought and no one who has had it complained.

I use store bought macaroni salad and doctor it up with shrimp and dill. I have used dried dill but really like fresh dill.
