Need a Good Banana Cake Recipe
My SIL is having a birthday and he mentioned that he loves banana bread and cake. So, it looks like I'm making a banana cake next week. I'm thinking cream cheese frosting would be good for it. Anyone have an excellent banana cake recipe they'd like to share?

My family loves this cake from BH&G. Place 2tsp lemon juice in measuring cup and add milk to make 2/3 cup. Sift 2 1/3 cups reg. Flour, 1 2/3 cups sugar, 1 1/4tsp. Baking powder, 1 tsp baking soda and 1 tsp salt into large bowl. Add 2/3 cups shortening, 2/3 cups mashed fully ripen banana and sour milk. Mix just until flour is dampened. Beat for 2 min. Add 2eggs, beat 2 more min. Stir in 2/3 cups chopped walnuts. Bake in 2 greased 9” pans 350 degree oven 35 min. Cool ten minutes. I always make sure the bananas I use have almost black skins so the cake has really good flavor. My family loved whipping cream and sliced bananas between the layers and on top too.

Something different than what you are actually wanting, Carrot Banana Bread with Honey Frosting.
A favorite in our family.
Carrot Banana Bread
1/3 cup Canola oil
1 cup sugar
2 eggs
2 cups flour
1 tsp. baking soda
1/2 tsp salt
1/2 tsp. gr. cinnamon
1 cup mashed bananas(2-3 med.)
1 cup grated carrots
1/2 cup chopped pecans.
In mixing bowl combine oil and sugar. add eggs, mix well. Combine flour, baking soda, salt, & cinnamon. Add to creamed mixture alternately with bananas. stir in carrots and pecans. Transfer to a greased 9x5x3 in. loaf pan. Bake 55-65 min. or until tests done with toothpick. Cool 10 min. in pan before removing to wire rack to cool completely.
Honey Frosting: A Martha Stewart recipe.
1 stick unsalted butter-very soft, 1 -8oz bar cream cheese, 1/4 cup honey,
Add powdered sugar to spreading consistency.
A favorite in our family.

I use the BH&G recipe too. It is the best. But my recipe calls for 1 1/4 cups of mashed bananas, other wise everything else is the same. Not crazy about nuts in my cake so leave them out. I line the bottom of my pans with wax paper circles, makes for really easy release from pan. Banana cake is my favorite too, since I was a little girl.

Here are two recipes that are favorites in my family.
Banana Tea Ring
You cook this in 2 loaf pans, an angel food cake pan or a bunt pan. Preheat oven to 350 degrees.
The Ingredients:
1/2 c. butter
1/2 c. brown sugar
1/4 c. granulated sugar
2 eggs
1/2 tsp. almond
2 c. flour
1 tsp. baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 c. buttermilk
1 c. mashed bananas
1/2 - 1 c. chopped walnuts (Tess Note: I usually use 1 cup)
Powdered Sugar
Directions:
Cream Butter and sugars using an electric mixer until light in color.
Blend in eggs and almond -- beat until light
In a separate bowl (or large glass measuring cup), mix the bananas and buttermilk.
Sift dry ingredients
Alternate wet and dry ingredients -- starting and ending with wet. Mix well between additions.
Stir in nuts.
Pour in greased tube pan, bunt pan or 2 loaf pans.
Bake 350 degrees for 30-35 minutes (or until it pulls away from the sides)
Cool 10 minutes before removing from pan.
Dust with powdered sugar when almost cool.
Chocolate Chip Banana Bread
You cook this in a loaf pan..
Preheat oven to 350 degrees.
The Ingredients:

2 c. flour

3 mashed bananas
1/2 c. chopped dates (or raisins)
1/4 c. chopped maraschino cherries
1/4 c. chocolate chips
1/2 c. chopped nuts

Add flour and baking soda and mix well
Add bananas and other fruit and beat
Stir in nuts and chocolate chips
Put in a large greased loaf pan

Banana Coconut Cake
3/4 c shortening
1 1/2 c. sugar
2 eggs
1 c mashed ripe bananas
1 tsp vanilla
2 c cake flour
1 tsp soda
1 tsp baking powder
1/2 tsp salt
1/2 c buttermilk
1/2 c chopped pecans
1c flaked coconut.
Mix ingredients together in usual fashion, reserving coconut. Pour into 2 greased and floured 9" pans. Sprinkle with coconut. Bake at 375 deg. for 25-30 min.; loosely cover with foil the last 10 minutes. Cool for 15 min before removing to rack, coconut side up.
Butter Cream Frosting
1/2 c shortening
1/2 c butter
2 c. powdered sugar
1/2 tsp vanilla
1/2 tsp coconut flavoring
1/4 c cold evaporated milk
Place one layer of the cake coconut side down, layer of frosting, and other layer of cake with coconut side up. Frost sides and 1" around top with the coconut open in the center.

Wow! Lots of great choices...thanks everyone! His Bday is on Nov. 3rd, so I have some time to gather the ingredients and maybe even "test" a recipe for my DH and I. (So why am I not 30 pounds less than I am? I wonder...LOL.)

This is my mothers recipe, It's an old recipe.
Lovelight banana cake
2 eggs separated
1 cup sugar 2 cups flour, 1 tsp baking powder, 1 tsp. baking soda 1 tsp salt
1/3 cup oil, 1 cup mashed bananas, 2/3 cup buttermilk or sour milk, 1 tsp vanilla
1 cup walnuts if desired.
You can sour milk with 1 tsp vinegar.
Beat eggs until frothy gradually mix in 1/3 cups of sugar until stiff and frothy. mix in flour baking powder
baking soda and salt.
In another bowl add oil, mashed bananas, buttermilk
and vanilla.Beat 1 minute.
Fold in gently to top ingredient. Fold in nuts. bake in two layers 350 for 30 to 35 minutes
Icing
5 tbs. flour, 1 cup milk. Mix together until no lumps. cook on low until thick, let cool.
add 1 cup sugar, 3/4 cup crisco, 1/4 cup butter.
cream until smooth add pinch of salt. 1 tsp vanilla beat 5 minutes.
Everyone raved about this cake when mom made it.
