Default Over Ripe Bananas

What do you do with over ripe bananas? I know...banana bread, but what else? I stick them in the freezer when the skins start to get covered in brown spots. I like to use them as a base to make sorbets.

Berry Sorbet

1 ripe banana
3-4 cups of mixed berries (fresh, or frozen)
a small sprig of peppermint
sugar to taste

Blend it all up in the food processor and strain into a bowl. Put the bowl in the freezer to get the mixture nice and cold, then churn in your ice cream maker. You can also let it get semi-frozen in the bowl and then stir it up by hand every half hour, or so.

I would probably eat some of it while it was/is still mushy.

I like your suggestion! If they are browning up they are probably sweeter than normal so not much extra sugar will be needed. What I do is throw them into a smoothie - frozen or not after they get brown. Or mush them to make fritters with them (fried bread bread dough mixed with fruit). I have frozen bananas waiting for me to make into banana bread and fritters when I am ready to deal with a hot stove again.

Found this recipe on the internet several years ago. The name is absolutely accurate - they are mouth-watering. Enjoy

Mouth-Watering Banana Bars

Bars:
½ c butter 1-1/2 c sugar
2 eggs 1 c sour cream
1 tsp. vanilla 2 c flour
1 tsp. baking soda ¼ tsp. salt
2 mashed bananas 1/2- 1 c chopped nuts (optional)
--Mix all ingredients together in a large mixing bowl. Pour batter into a lightly greased or parchment paper-lined 9x13 baking try. Bake at 350 for 25-30 minutes. Cool completely before spreading with cream cheese frosting. NOTE: for high altitude, bake at 375 for 30-35 minutes.

Cream Cheese Frosting
4 oz. cream cheese, softened
¼ cup butter softened
2 tsp. vanilla
2 c powdered sugar
--Whip all ingredients together ‘till well blended.

Those look good, FoxyLady....high cal, but great for a special treat.

Slightly OT...I read that the banana peels are good for soothing dry skin. You rub the inside of the peel over the skin and leave it on for awhile. I tried it yesterday and it did make my skin feel softer and not so irritated. I'll still have to do multiple tests to see if I'm a firm believer.

My neighbor made this recipe into cup cakes and lightly tinted the frosting orange for Halloween one year. I loved them but she would not share the recipe. Thanks for sharing.

I freeze mine & make them into banana muffins which my DH loves. I'm not an fan of ripe bananas but I will mush them up & mix them with peanut butter & put them on bread for a banana sandwich which I dearly love.

I'd normally freeze them and throw them in smoothies. The price of fruit has gotten very expensive, $1.68 for apples is crazy, the 40 ounce bag of frozen mixed fruit is $9.75! I only buy one or two bananas at a time now so I don't have any going brown.
