1/2 C. butter, softened 6 Tbsp sugar
6 Tbsp packed brown sugar 1 egg
1/2 tsp vanilla extract 1 cup + 2 Tbsp all
1/2 tsp baking soda purpose flour
1/2 tsp salt

Filling:
1/2 C. packed brown sugar 1 egg
1/8 tsp salt 1/2 C chopped Walnuts
1 cup semisweet chocolate chips

1) In a large bowl, cream the butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well.
2) Fill paper-lined muffin cups half full. Bake at 350 degrees F. for 10 min or until top of cupcake appears set.
3) Meanwhile in a small bowl, beat the brown sugar, egg and salt just until combined. Stir in chocolate chips and walnuts. Drop filling by rounded Tablespoonfuls into the center of each cupcake. Bake 10 min longer or until a toothpick inserted in the cake portion comes out clean.
4) Cool for 10 minutes before removing from pan to a wire rack to cool completely.

These are awesome.. it makes 12 . I'm going to try them with a variety of "fillings".. like maybe Reeses mini peanut butter cups.. or white choc chips and macadamia nut bits. or maybe choc chips and coconut.. yummie!! enjoy

Dang.. the ingredients ran together.. sorry.. here's a clearer list.
1/2 C butter, softened
6 Tbsp Sugar

1 cup plus 2 Tablespoons all purpose flour
1/2 tsp baking soda
1/2 tsp salt

Filling:
1/2 C. packed brown sugar
1 egg
1/8 tsp salt
1 cup (6 oz) semisweet chocolate chips
1/2 cup chopped walnuts

Actually I just made them for the first time.. just got the recipe from a Taste of Home magazine.. oops.. guess I should have credited them.. it was in the Weekend magazine that is on the stands now. It was from a reader named Sue Smith in Joaquin, Texas. But I can see changing this up and making them often.. I'm going to try them with white chocolate chips and macadamia nut bits. Also thinking about using mini peanut butter cups in the middle. I did use the mini chips instead of regular ones and I really liked that.
