Ok, I have shared my awesome Oatmeal Cookies and PB Cookies - here is my 3rd recipe, Soft Chocolate Cookies

1/4 c. + 1T oleo or butter
5 ounces of baking chocolate

melt together and mix well. Add 2 c. sugar and 1 egg, mix well.

Sift together
2 c. flour
2 t. baking powder
1/2 t. salt.

Add to chocolate mix, add 1/4 to 1/2 c. water if needed to mix in.
Chill dough 30 minutes in fridge. DO NOT exceed 30 minutes, dough will get too hard.

Roll into good size balls, dip tops in sugar if desired, bake at 300 degrees for 15-18 minutes.

These spread a little, but not too much. They will be soft when you take them out of the oven, let them set up and cool before removing from cookie sheet.

These are very chocolaty rich, and moist like brownies.

Looks yummy! When did you post the oatmeal cookies. I think I missed these. Could you, would you, please, post the oatmeal recipe again? Thanks:o)

I love these, make sure you don't overcook them if you want that soft chewy texture.
I use maple extract instead of vanilla. And add raisins if you like them. sometimes I add chopped pecans as well.

looking back through My Topics I see that I already posted the chocolate cookie recipe!! OK, I am now officially out of cookie recipes :-)
Except for maple shortbread, which I try not to make as it goes directly from oven to mouth with no stopover at the cookie jar!!

thanks!

ptquilts,

Thanks for sending the oatmeat recipe again. I appreciate it. I'm planning on making these cookies for my dad's 87 b-day. But Hmmm! Maple shortbread cookies????????? Maybe not, because cookies that make it to the mouth first goes straight to my middle section (that muffin look).

Anyways, thanks for sharing!

Where in Vermont are you?
