I baked mine in cupcake papers with a little brown sugar and pecans in the bottom with the batter poured on top. I always spray the cups with non-stick spray when doing muffins, they come loose better.

I used to make that bread too. It was pretty good.

I'm making myne tonight .. try substituting more milk than oil to cut the fat.. when you make the chocolate one, coat the pan with Quick and sugar, top too.. coconut cream pudding and coconut is very good too. A little coconut sprinkled on top .. Also {SP} Pictacio nut and banana combo is good also with nuts ,extra banana and choc chips. I make mine in a big cake pan that way it cooks all the way thru.. since all my friends have this now I just add 1/2 cup so that it only makes enough for me. I save about one cup and 1/4 and cook the rest. I add one weekend and then cook the next weekend.. I once missed the cook one and just added again and then cooked the next weekend .. still worked .... this thing never dies and always works no matter what you do to it!! what ever pudding you like can be used just be creative. I will have to try the apple one, hadn't thought of that one .. Thanks KT

If you leave the fruit set long enough you don't need the brandy. It will ferment on it's own. I used to make it too.
