Another Secret Ingredient: Kelp Powder

Last year, I discovered kelp powder. It's a pretty amazing substitute for anything fishy tasting. The smell is just like the ocean. I like to add it to my Dashi and ramen broths, Thai dishes that require fish sauce, and a pinch is very nice in crab cakes. I have overdone it at times and my food smelled something like mackerel cat food...blech! But, if you go easy with it and it can be just the missing ingredient in a dish. I can't remember where I got it. I think it was at our local food co-op, but I'm sure it is orderable online. Cheap too!

It bet it will be good in Miso soup. I usually grind up the sushi wrappers for flavoring.

Have you tried Dulse? It is dried seaweed and is a great substitute for salt. It has an "oceany" flavor as well, but not overly so. I use it in my asian style dishes.
