My husband is wheat intolerant. We substitute rice or corn noodles in all our hot dishes. You can tell the difference other than you should under cook them a little and don't eat as much because they are higher in carbs. Madison, WI has a nice bakery called the Silly Yac that is all gluten free stuff and tastes awesome. Rice crispy bars are wheat free for a treat.

O i forgot to say check ingredient labels on everything. All cream soups have wheat, most of chips are wheat, licorice has wheat, etc. You can find wheat free items but they are expensive.

I have two grandchildren with Celiac's, I make them gluten free peanut butter cookies. 1 cup natural peanut butter, 1 cup granulated sugar, 1 large egg beaten. Combine all ingredients and bake at 350 for approx 10 minutes. The cookies are fragile but yummy.
