Avocado a day

Ever since Brian Williams reported that eating an avocado a day can lower your cholesteral, I have been looking for ways to include it in my diet beyond sandwiches and salads. On GMA today they were talking about Avocado Pudding. I had to try it and whipped together my own recipe but there are lots of versions if you google. I didn't want to use my processor so I smashed one avocado smooth with a fork, added a little less than 1/4 cup cocoa and used 1/4 cup corn syrup as my sweetener. Some recipes called for brown sugar and milk but mine was smooth enough with the corn syrup.
It will be my lunch today as it is supposed to replace a meal because of the calories. Give it a try and it is pretty tasty.[ATTACH=CONFIG]506400[/ATTACH] |

Next time I am going to cut my cocoa to 1/8 cup so I can reduce my sweetener also. I am also wondering if I could use it to ice my brownies. Oh the possibilities are intriguing!

I love avocados! I grew up with a mature, abundantly-producing avocado tree in our yard and I have missed that tree for years! I eat them with nothing but a spoon and a little seasoning. Just cut it in half, remove the pit, shake on some seasoning and eat it just as-is. Delicious!
I also make avocado sandwiches that is nothing but bread with a little mayo and slices of avocado inside. Also very yummy. I love the flavor of avocados, so I don't like to hide it with much. Even guacamole "hides" too much of the flavor sometimes. They are high in fat, but it's the 'good' kind of fat. |
I love avocado's too!! By themselves or in a salad. I would have no problem eating one a day!!!

My favorite is either canned sliced peaches, pears or a can of Mandarin oranges and one whole chopped up avocado on top with a nice sprinkle of Catalina Classic dressing. Or chopped up on a taco salad. Our big grocery store had them for $1.29 each yesterday. Whoo-hoo!!!!! I know where I can find them forty cents cheaper. The sale ends today!!!!!!! When I was a little girl my mom would mash an avocado and put it on a piece of heavily buttered toast. (Toast needs to be very light in color.) Then she would broil the toast just a little until it was bubbly on top. She would sprinkle Parmesan cheese on hers before broiling but I didn't care for it.

Summer fare....half filled w either tuna or chic salad, and any fruit sliced with a scoop of cottage cheese.....I remember a time we were told avocadoes were a no-no....not for me - ate them then, eat them now.......

I love a good salad with avocados and tomatoes. Or just make a sandwich out of avocados and tomatoes with little lettuce on bread. Don't forget the wine! Also throw in a well done fried egg and you have a great breakfast sandwich.

For those who are concerned about the cost of Avocados, where I live the big ones are $2.50 to 2.99 each. This past week they were buy one get one free.
The green grocer gets tiny ones in that sell for under a dollar. When I find them on sale, I buy the firm ones and keep them in the fridge. It only takes a couple days on the counter to soften them up. This is the only way I have found to stock up on them when they are on sale. Due to price ds and I share one big one a week. |
I can buy a mesh bag of 6 for $3 here. I am sure the price is determined by supply and demand. Not as much demand here in Canada yet so they are priced to move? I waited til mine were perfectly ripe, cut them in half to remove the seeds(because I wanted to root them) and put them back together with a piece of wax proper between the halves. I put them in a freezer bag to freeze.
The one I took out of the freezer this week (like a rock), I thawed and made my pudding. It looked just about like fresh with only a little darkness on the surface. I Googled and they said Avacados freeze well. |
I love them too plain with a little salt.

I love avocados. I had guacamole salad for lunch. It is a recipe from food network, by the Barefoot Contessa. I also love them with an egg. Cut in half and remove the seed, scoop out a little bit of the flesh so a raw egg will just fill the hole. Put in a pan and bake at 375 until the egg is done to your liking. Can top with bacon and cheese. Slice it in a small casserole and top with chopped spinach, peppers or whatever and an egg and bake. MMMMMM! Having one tomorrow.

A friend of mine mixes avocado with garlic powder (or seasoning of your choice and puts it on an English muffin with alfalfa sprouts and a slice of Swiss or provolone then puts them under the broiler till the cheese melts. It is the first time that I REALLY enjoyed avocado

Try using avocado to replace the mayonnaise in egg salad.

I grew up with an avocado tree too and I love avocados with french dressing. My favorite dish is avocado with grilled cod fish and fresh onions, a little salt and a little olive oil. Yum! Memories!

I used to use them like butter on fresh bread. Wow!!!

I just like avocado anyway...for a snack..a warmed flour tortilla, mashed avocado and salsa, roll the tortilla and you have an avocado taco!

If you like guacamole, buy avocados when they are on sale. You can freeze them whole just make sure they are ripe before you freeze them. I mention guacamole because once they have been frozen they are way too soft to slice. Or you can make avocado soup. I can chicken broth one ripe avacado a little lime and salt puree in blender or food processor . Serve warm or chilled.

This is soooo good! One of my quilting buddies is Celiac so we can all enjoy this as our dessert on quilt day. I make 2 ripe avocado... 1/2 c. cocoa powder... 1/3 c maple syrup.... 1/2 c coconut milk... 1 tsp vanilla and blend it together and even avocado haters enjoy this chocolate pudding!
I've never frozen avocados so should try that tip out, thanks! |
i eat one just about every morning tast a piece of whole wheat bread mash avocado spread on toast add a sliced hard boiled egg very good!!
