Avocado recipes

I have an abundance of avocados. They are to high to pick now, so they drop and are not real good by then. I make an avocado bread, any other ideas?

I was watching Allie Vincent the other day and she has a cucumber and avocado salad that she does on the Live Well Network. I don't don't know if it is on the site but you could check. She is the girl that won the Biggest Loser a few years ago. I love your avatar picture! I have that one and the kitty on my Bucket list.

I'll take a look. Thank you. My avaitar is a pillow I made, a paper pieced picture of my dog Maggie.

Could you get one of those long handle lite bulb things I don't know what they are called but you can use them to reach up to unscrew a bulb up high. :)

tatavw01 08-11-2012 08:26 AM

patchsamkim 08-11-2012 08:33 AM

Guacamole of course. Have a collection of lots of avocado recipes...later in day will post a few. I have even heard of grilled avocado but never tried it...sounds good though.

You are more than welcome to ship some out o me.. They are $2 each.
I was in Santa Barbara a month ago. My sister's niece has a ranch there, and they have avacado trees all over.. It is so beautiful there.. They have the best of both worlds.. It as the mounains, and has the ocean not too far. We also went to Carpenteria

Judymc 08-11-2012 09:37 AM

We have a avocado picker poll with clippers on the end and a bag to catch. Even with a ladder they are to high. The tree is huge. Climbing the tree with the poll would work but know one wants to climb it. So we preety much have to let them fall and hope we get some good ones out of it. The animals eat alot too.

Judymc 08-11-2012 09:41 AM

Wish they were good enough to ship, most of them aren't. When they get old the old goes to the bottom and they get a sof black spot. Just in Carpinteria yesterday, said the same thing about the ocean and the mountains. Did you go to the new Quilt store in Carpinteria? Roxanne's.

I didn't go to the quilt store. I was in Marina Del Rey for a conference, and drove up to the area for the day. I did go shopping in down town LA... I was visiting. My sister's niece has a ranch in Santa Barbara, and two house on the ocean in Carpenteria. We were hanging out in the guest house. I live in NY, my sister lives in FL, and my niece was there with her son from CO.. I see my sister a lot, but I don't go out to CO.. It was a great trip.

Just in Rapid City, SD and went to "On the Border" for lunch and we had fried Avacado, thin wedges dipped in tempora and deep-fried with a mustard/horseradish sauce and salsa, VERY good. On my mixed plate, I had a half avacado with pulled chicken and cheese dipped in tempora and fried. SOOOOOOOOOO goog!

This one has a zillon calories but it's worth every one of them.
Avacado Pie
1 graham cracker crust or make your own with 1 cup graham crackers, 1/4 cup butter and 1/2 to 1 cup finely chopped walnuts

Filling: 1 large avacado, 1 - 14 oz can sweetened condenced milk & 1/4 cup fresh lemon juice. Put all in a blender. Blend until smooth and pour into pie shell.

Topping: 1 cup sour cream, 2 T milk. Blend and pour on top. Sprinkle with chopped walnuts. Chill over night.

I have fun not telling anyone what kind of pie it is and let them guess after they've tried it. Most of the time they never figure it out. Even people who don't like avacados usally like the pie.

  • 30 grape tomatoes, halved

  • Coarse sea salt and freshly ground black pepper, to taste

Combine the watermelon, tomatoes, cucumber, basil or mint in a large serving bowl.
Place the vinegar in a small mixing bowl, whisk in the oil, add the mixture to the salad, and toss well add avocado Season with salt and pepper, and serve either chilled or at room temperature.

you can change it any way you like, if you don't have grape use cherry or 3 or 4 small to medium red and/or yellow tomatoes. You can do 1 tablespoon chopped mixed fresh herbs, in any combination: basil, tarragon, chives, and cilantro

enjoy

Avocado / Tomato /Mozzarella Salad

2 avocados (peeled, pitted, & cubed)
2 - 3 tomatoes (cubed)
1 ball fresh mozzarella cheese (cubed)
2 Tbsp extra virgin olive oil
2 tsp. basil (we used dried, but you could use fresh)
salt & pepper (to taste...I like it saltier than Dakota does)

Put the cubes of avocados, tomatoes,
and mozzarella in a bowl.
Drizzle with olive oil.
Add basil, salt & pepper.
Mix lightly.
Enjoy.
(Best to eat it right away.
At room temperature.)

You need to hire 10-year-old to climb that tree for you. Sure wish I could get some - ours are $1.50 for tiny ones. When I make guacamole, using 4 avocados and 2 tomatoes, I can eat the whole batch by myself. They're good for you, I tell myself.

Judymc 08-12-2012 07:01 PM

Thanks for all the great recipes. I need to try a few of them.
My neighbor make an avocado chocolate mouse. Can't eat much it very rich.

Maggiemay 08-12-2012 07:39 PM

No great avocado recipes from me, sorry! I have been to Roxanne's in Carpinteria. So glad to see another fabric store go in after the Treasure Hunt closed. Nice fabric- very pricey. I didn't see anything under $11.99/yd. They had some beautiful refurbished Featherweights in there.

We love to put avocado on our sandwiches - especially ham and turkey. Yum. Makes me hungry thinking about it.

ziegamomma 08-13-2012 06:33 AM

Yummy sandwiches:
Avocado on a BLT with a garden tomato
Avocado with egg salad and tomato

Iraxy 08-13-2012 07:16 AM

Avocado, grapefruit and french dressing. I also like avocado, bacalao (salted dried codfish that is desalinated), yucca, and yautia salad with lots of olive oil. Yum, my mouth is watering.

Latrinka 08-13-2012 08:13 AM

The only thing I like is guacamole! Yum!

Eileen De Ville 08-13-2012 11:42 AM

Have you tried making a BLT with avadaco? We love them. For health reasons, we use turkey bacon, which takes a little getting used to, but tastes pretty good. When we can get them at a reduced price, I buy several to use in salads.
Another idea is, cut the avacado in half, leave in the skin (remove the seed), make up an Italian Dressing, place some crab meat (or faux crab) in center and pour the dressing over it. Goes over big when having guests
for dinner, too.

barri1 08-13-2012 03:54 PM

I like avacado on toast instead of butter..

Stitchnripper 08-16-2012 06:54 PM

I have an avocado ripening now - I'm going to peel and slide and sprinkle with some kosher salt and enjoy it just like that. Yum.

tatavw01 08-20-2012 05:27 PM

try: pesto, avocado, tomatoes and whole wheat, toss together pesto, pasta, chopped tomatoes. Once well toss add avocado and enjoy.

jaspersu 08-20-2012 06:06 PM

I read that you can freeze avocado for later if you mash it up with some lime juice.

I put mine in smoothies. Works in almost any fruit smoothie recipe. Also I like floating chunks in soup and putting slices on sandwiches. Oh, and my favorite is a grapefruit avocado salad. And my other favorite is roasted beet, avocado and quinoa salad. And I want to try cantaloupe and avocado with honey lime vinegrette.
