It looks like our previous thread about meatball recipes was dropped during the site makeover. Here it is again. Please share your favorite meatball recipe. (I'm particularly interested in the one using grape jelly.) Thanks.

As I write this, I'm making some vegan, seitan meatballs. Honestly, I put all of the leftovers that I could find in the fridge and blended them up in the food processor, s/a mushrooms, refried beans, broccoli, onion, salsa, cilantro, black olives w/juice, broth, etc. I added it the mixture to my basic seitan burger recipe and made a batch of small, steamed balls. The mixture tasted pretty good raw, so I'm hoping they'll be tasty.

Well to start with this thread had me jump up and put on a very simple recipe of Swedish meatballs. I mean really simple. I take pre-made meatballs from Gordon Foods (frozen), add a can of mushrooms, some onions and a can of mushroom soup. Put them all in the crock pot for a few hours and Wham... dinner. No fuss at all. Yummy and now for dinner tonight. Leftovers for dinner tomorrow.

The grape jelly recipe is a standard with many variations, I know it mostly with the little Smokie sausages instead of meatballs, but works either way.

It's just about a cup of grape jelly plus about a cup of BBQ/Chili/Your Favorite Sauce, depends some on what you have on hand. Some people add in other things like Sherry or some extra chili flakes.

I usually look at cooks.com for recipe ideas and blend a few together to get my desired end product. You can just put in your ingredients and see if something comes up, or here's the search for "grape jelly meatballs"

Again, my hubby's non-recipe potluck hit is simply to buy premade/precooked meatballs, and then two large packets of gravy mix, usually country + country sausage pepper. Sort of like the Swedish meatballs but not quite and a lot easier to do then me mixing and cooking for him. Thaw the meatballs the day before the potluck, make the gravy and heat up with the meatballs in a crock pot.

My vegan meatballs turned out amazing! The cost was about 1/3 of what I could buy in the store and much fresher too. Plus, I got rid of all of those little leftover dishes in my fridge. I put a couple of dozen in the freezer, so I can make quick meals with them later on. I also made patties for hamburgers and froze those too.

(I forgot to mention that I added a few pinches of homegrown Italian seasoning to my meatball mixture before I steamed them. I think that really added a lot to the flavor.)
