This versatile recipe is great for breakfast, brunch, or snack. We ate it in the car on the way to the beach! And only 3 WW points for 3 x 3" serving! From Gourmet mag w a few modifications.

Dry ingredients: Stir well
3 cups oatmeal
1 cup raisins or other dried fruit
1/4 c sugar
2 tsp baking powder
1 tsp cinnamon
dash salt

Wet ingredients: Whisk together
1/2 c natural applesauce
1/2 c yogurt
1/2 c milk
2 eggs or 4 egg whites
2 tsp vanilla

Combine wet & dry. Sprinkle top w 2 T brown sugar & more cinnamon. Bake at 350 in 9" square pan or casserole.
for 35 mins.

You can measure out the ingredients the night before & bake it fresh while you have your morning beverage. Try it!

Sounds great! I'll have to try it!

A quick question . . . is the yogurt just plain yogurt?

I use low fat vanilla because I usually have it on hand. I bet you could use lemon, plain, whatever. Any fruit. I'd love to add nuts but a frequent guest here is allergic.
