Beet pickles
 
Just finished making pickled beets. How long do them have to sit before you can eat them? Does it have to be weeks and if so how many?

You could eat them any tim, but my Mother's fantastic pickled beets were sooo much better after a few weeks! Like all pickles...a little better after they have time to benefit from all the seasonings.

I love pickled beets. I used to can lots of them because I made them for my own family plus for my grandma & Dad & my 2 cousins. I don't can much at all anymore but someday I am going to can some beets again. I buy them sometimes in the jar but they are just not the same as homemade..

Oh, sorry, I was also going to say you can eat them anytime but they are best left a couple days in the frige

I bottled some yesterday. Hate the mess but love the results!
Eat them any time. We had some yesterday with our evening meal.

I wouldnt be able to leave them very long at all :D that and pickled red cabbage... shame Im dreadfully allergic :(
