Best coating for chicken fried chicken
 
30 saltine crackers <!-- ngRepeat: deal in deals["2231"] --> <label class="checkList__item" ng-class="{true: 'checkList__item'}[true]"> 2 tablespoons all-purpose flour </label> <!-- ngRepeat: deal in deals["1684"] --> 2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon black pepper

Add all to food processor.

I add cayenne instead of seasoned salt just because I like the heat.
Dip flattened chicken breasts in egg. Then coat with crumbs. Fry in oil. I found it on Allrecipes.

They sell white gravy mixes at our local store that I use for topping. Left overs make good sandwiches.

I use leftover crushed potato chips mixed with grated parmesan cheese.

My DIL gave me this recipe and we really like it. 1 sleeve of ritz crackers, 1/2 cup Parmesan Cheese, 1/4 t. garlic powder and 1/4 t. Pepper. This is a good topping for frying or baking. I decided one day to add the crumbs from the cheese it bag. We really liked it, so now I always add cheese it's. But I also add any other cracker crumbs that are left in the bag. Makes for some interesting topping, but I can't duplicate it as I never remember what I have put in it. I also use chip crumbs sometimes for frying and baking chicken.

Down in Texas I learned a neat substitute for the egg in this recipe. Try using buttermilk (I know, what?) its sounds strange at first, but after one taste, you will understand. It tenderizes the chicken,pork or beef and adds a wonderful complexity to any of them. I have even used it on fish.

I use buttermilk to bake and fry many foods. When it calls for milk I usually use buttermilk. It's better for you too.

I use jiffy corn muffin mix (dry)
Cayenne pepper
Garlic
Sometimes Ritz crackers, Panco whatever I have on hand
Dip in buttermilk instead of egg

Company always ask me to make it if they are coming over for dinner.

I know it sounds strange to use muffin mix but it's really good.

Thank You, I will try this. I use Ritz crackers to coat my pork chops and love the coating it makes. Chicken should be good to.
