Best Easy Fruit Salad

1 Attachment(s)
I am buying the ingredients for this salad tonight. Its from several friends who love it. Easy, too!

The Best Fruit Salad in my opinion!

1 (29 ounce) can peach slices
1 (20 ounce) can pineapple chunks
1 (3 1/8 ounce) box dry vanilla instant pudding mix
... 1 lb strawberry, (quartered)
1 banana, (sliced)
1/2 pint blueberries
1 bunch grapes (I use the red ones)
1 -2 tablespoon sugar (optional)

Directions:
In a large bowl, combine peaches, pineapples, and vanilla pudding mix. This includes the juices from the cans. Mix well until pudding is dissolved. Stir in strawberries, banana, blueberries, grapes, and sugar if desired. Chill.

Wow, I would never have thought of using a dry vanilla pudding mix in with the fruit. Guess what's on my shopping list for tomorrow!

As a suggestion ... I would add an extra step ... drain the canned fruit, and dissolve the pudding mix in the liquid. Then add back to the fruit.

Mixing it as originally stated is fine ... though you may discover it's hard to get the mix fully dissolved plus the more you mix it to make that happen, the more you will damage/crush the fruit. To me, it'll be far nicer with the fruit nice and solid!

ENJOY!!! :D

I have been making fruit salads this way for years with a slight variation - I use canned fruit in the winter - diced pineapple and canned mandarin oranges. I drain off the liquid and save it. Then, in a large bowl I put the instant vanilla pudding mix and I use a little of the canned mandarin orange juice until it is "melted" and then I add the sliced bananas - seems to help in keeping them from browning so quickly. We also use miniature marshmallows added at the very end. Any kind of fruit - fresh, canned or probably even frozen will do.

Looks great...Thanks....

This is similar to one that I make. We call it Dad's Fruit Salad. I like taking it to potlucks because the pudding thickens the juice and doesn't run all over the plate! I use pineapple tidbits and fruitcocktail and drain a can of mandarin oranges. Lots of options for this salad and it looks pretty too. I have also taken it to camping potlucks because if everything is chilled all I have to do is open cans and mix!

what is the vanilla instant pudding mix? We do not have that over here in the UK so what is it, and what can we use instead of it please?

instead of the pudding mix, i drain the fruit, and use a jar of baby food bananas (or two, depending oh how much fruit is there) as the "binder". works great, and you can lick out the jar... i'm going to try the pudding mix, next time. sounds great!

>>what is the vanilla instant pudding mix? We do not have that over here in the UK so what is it, and what can we use instead of it please?<<

My mom makes a similar fruit salad with whipped cream as the base. Sometime she will use cool whip instead. She always adds miniature marshmallows. It was served many Sunday evenings and Holiday evenings.

Also similar is Waldorf Salad which uses mayonnaise as the base.

The ingredients in an instant pudding mix (I pulled out a sugar-free Cheesecake flavor pudding) are
modified food starch, maltodextrin, tetrasodium pyrophosphate, disodium phosphate (for thickening), non-fat milk, natural and artificial flavor, salt, calcium phosphate, xanthan gum, mono- and di-glycerides, aspartame, and acesulfame potassium (sweeteners) and coloring.
So, it's basically starch, sugar or sweetener, and a little milk, plus flavor.
Instant pudding is different from cooked pudding in that it does not develop a crust on top after making it, and it's ready to eat in 5 minutes.

>>Aspartame is nasty stuff....<<

I'm aware of that, and we're trying to get it out of our diet. This pudding package had been in the cupboard for some time.

Our pudding is like your custard.

Looks wonderful!!! Looove fruit! Wonder if you can use a dollop of greek yogurt instead???

ragqueen03 04-23-2013 06:26 AM

that looks yummy! i have a fruit salad i make a lot - the original recipe is from a Paula Deen cookbook. it is so easy to make:
1 can pineapple chunks, drained (save the juice fom this)
1 can fruit cocktail or chunky mixed fruit (drained)
1 small can mandarin oranges (drained)
1 small jar maraschino cherries (drained)
bananas, sliced

dump all the fruit except for bananas in a large bowl. in a seperate bowl combine the pineapple juice with 3 tablepoons Tang (instant breakfast drink) then add 1 small package of lemon instant pudding mix and mix well. pour over fruit and chill well - add bananas right before serving( i usually don't add the bananas because i don't like bananas mixed with anything )

i have made this four times in the last week and a half. my mother just finished chemo for breast cancer and NOTHING tastes good to her but she did eat this with cottage cheese. My sister is visiting and she insisted i make a DOUBLE batch of it (rumor has it she was heard scraping the bowl in the middle of the night - lol)
Also as a side note for anyone dealing with someone going through chemo - this was my mom's second bout with breast cancer and for some reason nothing tasted right but we discovered that if she eats her food with plastic utensils it did taste better for her.
